Wait, what? How did that happen?
Turns out.. there's not going to be a real super clear 'starting point' for when I started Keto. I mean did I start when I began thinking about going on a diet? When I started talking to people about it? When I started experimenting with foods? Or was it the first day I entered my food into the myfitnesspal diary, and came up within shooting distance of the 60% fat / 35% protein / 5% carbohydrates ratio that basically defines "what keto is"?
I'm going with the last one there, which puts me at Tuesday, November 6, 2012.
Day One, I did 65%/27%/8% with 28 grams of carbs.
Day Two, I did 69%/27%/4% with 20 grams of carbs.
Day Three, I did 62%/36%/2% with only 9 grams of carbs!
Remember, the goal is 60%/35%/5%.
It's clearly going to be an inexact science. So far I've learned that veggies can be eaten in decent amounts, that I can eat a lot of meat, and that I take in way too much sodium. Day 2, I took in 177% of the RDA for sodium! Yesterday, I managed to come in at less than HALF the RDA, by having chicken and avocado and zucchini with melted cheddar and hidden valley bacon ranch dressing for dinner. It was AWESOME.
So today I'm feeling a little gurgly in the tummy, and my arms are starting to hurt a bit. I'll take that as a sign that the keto is working, and my body is starting to realize that it's not getting the glucose it needs from carbs + insulin anymore. I'll drink plenty of fluids, and probably pick up a bit more salt today than yesterday.
I need a bathroom scale. Growing up fat, I never wanted or needed a scale, since they'd NEVER told me anything nice. So when I grew up, and moved out, I never bought one. My housemate has a big steel doctor's office scale, but she keeps it in her bedroom. So today I'm off to the thrift shops, to see if I can find a decent scale for a decent price. And if not, I'll consider dropping by a Walmart or something on my way home.
